I am NOT kidding when I say this is the only Jam / Jelly recipe you will ever need. I think I am really onto something here. This is going to be made all the time in the future (and with different fruit) so stay tuned! Oh, and the best part? Only just over 10 calories per tablespoon. Yes, actually 12 calories, but same thing basically.

As you can see in the pictures, I combined this with my Protein Peanut Butter spread on a slice of toast. This jam would be great as a topping on pancakes, oatmeal, Protein French Toast, and even rice cakes. Just like peanut butter, jam almost goes with anything.

✅ INGREDIENTS

  • 2 cups (100g) fresh or frozen blueberries

  • 1/4 cup (60g) sugar free maple syrup

  • 1 tbsp (15g) chia seeds

  • 1/2 tbsp corn starch

  • 1/2 tsp vanilla extract (optional)

INSTRUCTIONS
  1. Heat blueberries in a microwave safe bowl. Mine were frozen so I microwaved for about 1:30, so fresh blueberries will only need around 45 seconds.
  2. Mash blueberries with a fork. Add sugar free syrup and mix well. Now add corn starch and mix to make sure there are no clumps. Finally add chia seeds.
  3. Place in a jar or container and let chill in the fridge for a couple hours to set up. Once chilled, add to toast, oatmeal, pancakes, french toast, etc!

💡Yield: 18 servings (16g / 1 tbsp each)
