Crust

1 cup (120g) all purpose flour

⅔ cup (150g) plain, nonfat Greek yogurt

Pinch salt

1 tbsp (10g) Swerve granular sweetener*

¼ tsp pumpkin pie spice

2 tbsp egg whites (to brush the tops with)


Filling

1 cup (240g) pumpkin puree

1 scoop (34g) Macro Supps ONE Protein, vanilla ice cream

¼ cup (40g) Swerve granular sweetener*

½ tsp vanilla extract

½ tsp pumpkin pie spice

¼ tsp cinnamon

Pinch salt


Icing

1 scoop (34g) Macro Supps ONE Protein, vanilla ice cream

2 tbsp (30g) pumpkin puree

3 tbsp unsweetened almond milk (may need slightly more or less if you use a different protein powder)

¼ tsp vanilla extract


Notes

*Swerve is a sugar free sweetener that tastes, measures and bakes like sugar but without any of the calories or insulin response. It can be found in the baking aisle of most grocery stores or on Amazon. 



Instructions

  1. Preheat the oven to 375F. 
  2. Add all crust ingredients to a large bowl. Mix. Once it begins to combine, place on a floured surface and knead together until incorporated. Roll out to about ¼ inch thick. Cut into 6 rectangles. May need to fold together and roll out again to get all 6. 
  3. In a separate bowl, add all pumpkin pie filling ingredients. Mix together until smooth and combined. Add about 2-3 tbsp of filling to the center of 3 of the rectangles of dough. Pull / stretch the other 3 rectangles of dough slightly. Lay each one over one of the others already topped with pumpkin filling. 
  4. Use a fork to crimp the edges and seal in the filling. Brush the tops with egg white (which will help them get golden brown when they bake). 
  5. Bake at 375F for 25-30 minutes or until golden brown. Let cool and enjoy! 

Yield: 3 poptarts
