Protein Oatmeal Cream Pies

I don't know about you guys, but I used to love oatmeal cream pies as a kid. I would pack them in my lunch in elementary school. They were always a treat, and still are. I will be honest, it has been quite a long time since I have had one. The other day, I grabbed one from the grocery and it brought back delicious memories which inspired me to make a protein-packed, healthier version.

I have also seen they now have a peanut butter cream filled oatmeal cream pie now. So, as I always do, I went the peanut butter route. Only slightly addicted! If you want, you can just make a regular vanilla cream filling instead of the peanut butter filling. You could even make a chocolate filling. There are NO RULES!

Anyway, let's get to the tasty stuff!

Protein Oatmeal Cream Pies

✅ Cookies

  • 2 scoops (68g) Macro Supps ONE Protein, vanilla flavor

  • ¼ cup + 2 tbsp (48g) peanut flour (PB Fit or PB2)

  • ¼ cup (30g) all purpose flour

  • ½ cup (40g) quick oats

  • 1 tbsp. (8g) sugar free vanilla pudding mix

  • ¾ tsp baking powder

  • Pinch salt

  • 6 tbsp (92g) egg whites

  • ½ cup (120g) unsweetened applesauce

✅ Cream Filling

  • ½ cup (113g) plain, nonfat Greek yogurt

  • 1 tbsp. (8g) sugar free vanilla pudding mix

  • 2 tbsp. (16g) peanut flour (PB Fit or PB2)

  • ½ tsp. Vanilla extract

  • 2 tbsp. (30mL) unsweetened almond milk

  • Extra stevia / sugar free sweetener to taste

✅ Notes

  • For the filling, you can skip the peanut flour to make just a regular vanilla cream filling. If you sub out the peanut flour, add 2 tbsp of vanilla ONE protein to replace it. 

Instructions

  1. Preheat the oven to 350F. Add all dry ingredients for the cookies to a large bowl (peanut flour, flour, ONE protein, oats, pudding mix, baking powder and salt). Mix. Add egg whites and applesauce. Gently stir until a thick cookie dough forms. 
  2. Line a cookie sheet with a baking mat or parchment paper. Scoop cookie dough into 8 balls on the sheet. Press down to flatten. Bake at 350F for 10-12 minutes.
  3. While cookies are cooling, mix the cream filling. Add all ingredients to a bowl and whisk together until smooth and creamy. 
  4. Once cookies are cooled, add about 2-3 tbsp of the filling to 4 of the cookies and then top with remaining cookies to make a sandwich out of them. Enjoy!
