White Chocolate Pumpkin Peanut Butter Protein Cookies

Now that it is October, there are going to be a lot of pumpkin recipes. Of course, pumpkin is delicious year round, but even more so as the cooler weather starts to hit. We have some White Chocolate Pumpkin Peanut Butter Protein Cookies.... and yes, that is a mouthful. A very delicious one to be exact.

Cookies are never a bad option, and when they are packed with protein, low sugar, and this delicious, you really cannot go wrong. 

They start with a delicious, peanut butter protein cookie base which has been used a few times before with other protein peanut butter cookie recipes. 

Then, add some chocolate chips, pumpkin, and you have a wonderful, fall-themed protein cookie that everyone is sure to love.

One of the keys to making these turn out perfect, is of course, our ONE Protein which bakes better than any other protein powder out there. We are currently out of stock of Vanilla, and getting it back in ASAP, but in the meantime this recipe would also be delicious using the Chocolate Brownie ONE Protein!

Next, we have the use of Fokken Nuts new fall-themed "Basic Betch Pumpkin" peanut butter. This helps give the warm fall flavor. 

Finally, the sweetener. When making recipes like this that I want to taste just as good as the unhealthy version, I like to use Swerve sweetener which tastes and bakes like regular sugar.

✅Ingredients
2/3 cup (160g) Fokken Nuts Pumpkin Peanut Butter (or regular creamy peanut butter)
2 scoops (68g) Macro Supps ONE Protein, vanilla ice cream

1/2 cup (122g) canned pumpkin pure
3 tbsp (46g) liquid egg whites
¼ cup (50g) Truvia sweetener 
pinch salt

1/4 tsp pumpkin pie spice

1/4 cup white chocolate chips

✅Notes
*Truvia is sweeter than sugar and other sweeteners that measure 1:1 with sugar. If using a sweetener that measures 1:1 with sugar, use 100g or ½ cup.

✅Instructions
Preheat the oven to 350F. Mix peanut butter, egg whites, sweetener, and pumpkin puree in a large bowl. Add protein powder. Fold together until a smooth thick cookie dough is formed.
Stir in white chocolate chips. 
Scoop cookie dough onto a cookie sheet to make 8 medium-sized cookies. Bake at 350F for 6-7 minutes. Let cool and enjoy!
